Welcome back to Day 4 of our 12 Days of Infusions series!
Today's infusion and cocktail recipe, The Sherry Cask Old Fashioned, is courtesy of craft cocktail expert Sean Rapoza. Sean manages the cocktail program at Balliceaux in the heart of Richmond, VA's historic Fan District.
His infusion is a take on the Japanese malt whiskey Yamazaki Sherry Cask, named World Whiskey of the Year by Jim Murray in the Whiskey Bible 2015. Now on to the recipes:
Faux Sherry Cask-Aged Infused Moonshine Recipe
What you'll need - 1 bottle Belle Isle Premium Moonshine - 2 tbsp slivered raw almonds - 1 vanilla bean shell (or left whole, not sliced and scraped) - 1 tsp black peppercorn (preferably tellicherry) - peel from one orange, pith removed - charred oak stave - Optional: iSi whip/siphon and cream charger, for quick infusion
Here's how to make it Add ingredients and infuse at room temperature for 4-5 days; strain ingredients and discard, saving vanilla bean for another use. (Or: add ingredients to iSi siphon/whip and charge with one cream charger; infuse for 1-2 days at room temp, then discharge and strain ingredients, saving vanilla bean for another use.)
The Sherry Cask Old Fashioned Cocktail Recipe
What you'll need - 2 oz Sherry Cask Infused Moonshine - .25 oz demerara syrup - 3-4 dashes orange bitters, preferably homemade - PX sherry, to rinse
Here's how to make it Stir first three ingredients with ice; strain into a PX sherry-rinsed double old fashion glass. Add one large chunk of ice and garnish with an orange twist.
