To close out our 12 Days of Infusions with a bang, we've got a Charred Satsuma & Cinnamon infusion from Justin Ross. Justin is owner (and Advanced Sommelier) of Parallel 38, a fantastic Mediterranean-inspired restaurant located in Charlottesville, VA.

What you'll need - 1 bottle of Belle Isle Premium Moonshine - 4 charred satsuma oranges, halved - 2 charred cinnamon sticks

Here's how to make it Slice satsuma oranges in half and char the flesh with a small torch or place in a cast iron pan face down on medium for 45 seconds. Repeat with the 2 cinnamon sticks. Place all ingredients in a glass or other non-reactive container and allow to infuse for two weeks. Strain infused spirit through a fine mesh strainer and discard the solid ingredients.

What you'll need - 1 1/2 oz Charred Satsuma & Cinnamon Infused Moonshine - 3/4 oz rosemary honey - 2 1/2 oz Q Tonic (or any high quality tonic you prefer) - honey candied rosemary for garnish

Here's how to make it Build in a large Boston shaker by adding ice, infused moonshine and rosemary honey. Cold shake and strain into an ice filled double rocks glass and add Q tonic. Stir and garnish.
